750 gms - diced lamb
3 - onions, finely chopped
150 gms - oil
20 - saffron strands
500 gms - spinach, finely chopped
1 pinch - soda bi carb
2 - eggs, beaten
5 - cloves
½” long - cinnamon stick
½ tsp - green cardamom powder
2 tsp - coriander powder
2 tsp - chili powder
1” long - ginger piece, finely chopped
salt to taste
Method:
- Heat the oil and fry the onions.
- The add the meat and fry for 10 minutes.
- Add water and cook till the meat is tender.
- Add saffron, cloves, cinnamon, cardamom, coriander powder, chili powder and ginger.
- Cook for 5 minutes.
- Heat oil in another pan.
- Add the spinach and the soda bi carb.
- Fry till it becomes tender.
- Add the beaten eggs and salt to taste.
- Cook till uniformly mixed.
- Add the cooked meat on the spinach and cook for another 5 minutes.
- Garnish with sliced onion, green chili and lemon.
- Serve hot.
